Have a freezer full of ground deer, elk, or moose meat and need ideas? These tried-and-true ground venison recipes are some of the best ways to turn wild game into hearty, comforting meals your whole family will love.

A lot of hunters (and their wives!) turn most of their deer into ground meat, and for good reason. Ground venison is versatile, lean, nutritious, and can be swapped into almost any recipe that calls for ground beef. Whether you’re new to cooking wild game or you’ve been at it for years, these recipes will help you make the most of every pound.
How to Cook Ground Venison Without the Gamey Taste
If you’ve ever heard someone complain that venison tastes “gamey,” it’s usually one of two things:
- Processing issues. (meat not cooled quickly enough, silver skin left on, etc.)
- Taste buds that just aren't used to wild game yet.
Either way, there are simple ways to make ground venison taste mild, clean, and absolutely delicious.
The biggest trick? Add a touch of acid when seasoning the meat.
A splash of:
- red wine vinegar
- apple cider vinegar
- balsamic vinegar
…helps neutralize strong flavors and tenderizes the meat without overpowering it.
All of the recipes in this list use seasonings, aromatics, and cooking methods that keep venison tasting rich and savory... not wild or overpowering.
Should You Add Fat to Ground Venison?
That depends entirely on your preference.
We process our own deer and don’t add any fat to the grind. Venison is naturally lean, and when cooked properly, it’s tender and flavorful on its own.
But if you prefer a richer texture (especially for burgers, meatballs, or meatloaf), you can mix in:
- pork fat
- beef fat
- or even a bit of bacon
A ratio of 15 to 20% fat is the sweet spot for most people.

Hi,
I made your venison stroganoff this past winter...delicious! I plan on making many more of your recipes. Have you ever made stuff peppers w/venison? I have a pound or more of ground venison left and I was wondering if you had such a recipe, would you like to share it?

Hi there! I’m so glad you enjoyed the venison stroganoff. It’s one of our winter staples! Stuffed peppers with ground venison sound amazing, and now you’ve got me craving them. I don’t have a full post up yet, but I’ve definitely made them before! Usually with cooked rice, diced tomatoes, garlic, onion, and lots of herbs.
I’ll add a proper recipe to my list to share on the site soon. Thank you for the inspiration and I hope your next venison dish turns out just as delicious!
