This Amish inspired 3 cheese frittata recipe is an easy, delicious breakfast recipe full of cheese, eggs, and bacon. The perfect blend of savory breakfast favorites.
Frittata. I love that word. The way it rolls off of your tongue, it’s kinda fun to say. This one is the best I’ve ever tasted. Bacon, potatoes, and 3 cheeses coupled with some delicious eggs? Sign me up.
I usually save this one for the weekends so we can all sit down and enjoy its savory goodness since it takes a bit to bake it up. But, if you’re an early bird (I am not) throwing this together and putting it in the oven before the husband and kids take off is super easy, too. It takes about a half hour is all, but my husband leaves early for work. So weekends it is.
I used to be afraid to bake eggs. Every time I tried to bake them, they came out rubbery like those fake things at the McDonald’s. You know what I’m talking about. They kind of look like eggs, but they have no flavor and their consistency resembles that of a piece of fake food you got for your kids play kitchen at the Ikea.
But, these eggs aren’t rubbery, and this frittata is bursting with flavor. Full of all the breakfast favorites here. I mean, what breakfast is complete without bacon. Ask my one year old and she will tell you that bacon, is in fact, life. She loves the stuff. Runs around chasing me to get a piece of that delicious sliver of salted goodness. She hears the word bacon and she’s ready to get in her seat and enjoy.
I figured out the trick to make the eggs bake up well and not rubbery, though. You have to cook them on the stove just a bit. Then, slide them into your preheated oven and what comes out when they’re done is … heavenly.

Easy Amish 3 Cheese Frittata
Delicious frittata made with eggs, 3 cheeses, potatoes, and bacon perfect for Sunday brunch or a holiday meal.
- 1 Lb Bacon cut into 1" pieces
- 1 Large Onion chopped
- 9 Eggs
- 4 Cups Shredded Potatoes fresh or frozen, if frozen thaw
- 2 Cups Shredded Cheddar Cheese
- 1 1/2 Cups Small Curd Cottage Cheese
- 1 1/4 Cups Shredded Swiss Cheese
- Preheat oven to 350 F.
- In a cast iron skillet, fry up the bacon (cut into 1" pieces) with the chopped onion until the bacon is evenly browned.
- While bacon and onions are cooking, whisk together eggs, potatoes, and cheeses.
When bacon is finished, take a towel and sop up most of the grease.
- Go ahead and gently mix in your egg mixture with your bacon and onions leaving the heat on medium low while you incorporate.
Allow the bottom of your frittata to cook up on the stove. This helps the eggs not become rubbery.
Once you've got the bottom of your frittata cooked, place it into your preheated oven.
Allow the dish to bake for about 20 minutes, or until it's just set in the center.
